Love the part about "pizza can be as healthy or suicidal as the customer wants it to be". Too often in Chicago they prefer the suicidal version (sausage patty is the norm), but I think the culture is changing slowly but surely. Pizzerias in Chicago are branching out and I enjoy taking my tourists to more than the big names and stereotyped styles for some true Chicago pizza.
